It started with one bar and a long list of ideas.
We’re a small group of operators, chefs, and designers who believe a great restaurant is equal parts food, room, and feeling. From the raw bar at Blue Whale to the saloon at Salty Horse, every Blues venue is built to be unmistakably itself. (Placeholder — replace with the real history.)
Today we operate nine concepts across Las Vegas, San Diego, and Newport Beach, with the same crew that opened the first room still in the kitchen.

We build restaurants the way you’d build a great night out. Each concept has a distinct personality — coastal seafood, a western saloon, a tiki teppanyaki room, an all-day café — but they share a sensibility: warm rooms, a serious bar program, and hospitality that remembers your name.
Founded in 2014, the group has grown to nine venues while keeping the feel of a place run by people who love restaurants.
